Cold Weather Camping Recipes

1. Buttermilk Pancakes

As you wake up at your campsite to the cold, crisp air, nothing warms you up like a hot stack of mouthwatering buttermilk pancakes. With the right equipment and a steady campfire, they make for an easy meal even in the cold.

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 ¼ cups buttermilk
  • 2 eggs
  • ¼ cup melted butter

Mix flour, sugar, salt, baking powder, and baking soda in a large bowl or plastic bag. In a separate container, lightly beat the eggs and add the buttermilk and melted butter. Lightly oil the skillet and heat to a medium temperature. Once heated, mix dry and wet ingredients together, and pour ⅓ to ½ cup of batter for each pancake. Flip each pancake when bubbles start to form on the top surface. Once cooked, it’s time to eat up!

2. One-Pot Chili

It’s nice to return to your winter campground with a comforting, warm meal. This one-pot chili recipe combats the chill and is a great dish for you and your fellow campers to feast on.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 15 ounces of black beans
  • 14 ½ ounces dried tomatoes
  • ¼ teaspoon dried paprika
  • 14 ½ ounces beef broth
  • 2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Place a Dutch oven over the campfire and add oil to the coat. Add ground beef and crumble as you cook. As the beef starts to brown, add your onions to sauté. Once cooked, drain the grease, add all remaining ingredients, and stir to combine. Cook the chili for 20 minutes until it thickens to your liking. Serve and add preferred toppings.

3. Campfire Mac and Cheese

Maybe you’re looking for a meal with a similar feeling of comfort and warmth but with a different flavor to it. This campfire mac and cheese recipe is exactly that!

Ingredients:

  • 2 ½ cups whole milk
  • 1 cup water
  • 2 cups macaroni noodles
  • 1 tablespoon unsalted butter
  • 2 ½ cups grated Cheddar cheese
  • ½ teaspoon dry mustard powder
  • ½ teaspoon salt
  • ⅛ teaspoon ground black pepper

Start the fire and place milk and water in a medium pot to a boil. Add macaroni noodles and begin to stir often. Let the noodles cook for 7 to 10 minutes. Once the noodles are cooked, remove the pot from the heat and stir in the remaining ingredients. Once the cheese melts, it’s ready to serve.
